There’s something unique about how food tastes in various places. The food trail in Waterford feels the same about Food the Waterford Way. They say it’s because of the location in Ireland’s Sunny South East with the lush and fertile Waterford soil, the fresh sea waters off the copper coast, the Comeragh Mountains and breathtaking landscape.

But in fact they believe it’s something more. It’s the unique combination of the gentle climate, the close proximity to the sea, mountains and rich soil that makes the food taste just as it should, fresh, full flavoured, authentic and nourishing.

There is a rich history of food in Waterford. Once one of Europe’s largest trading ports, Waterford has always been a place of firsts. The first teas, the first wines, the first exotic spices reached the Irish shores for the first time through Waterford’s Port. In return, the world also got a taste of what Waterford had to offer. It’s this rich history and openness to new discoveries that has influenced the many dishes and ingredients that have been passed down from generation to generation and evolved over time that now make up the exciting array of food that’s available in Waterford today.

Food the Waterford Way offers you a chance to meet the people in the area and learn of the tradition of food in Waterford. A connected community of farmers, bakers, butchers, brewers, distillers and many other makers who come together to share and bring the freshest and highest quality ingredients in season to the many restaurants, stores and markets in the area. Each has a story to share of traditions and family secrets passed down while also having new flavours and ingredients to explore.

Here is your chance to visit and meet some of them and find out how they have been inspired to make their food and drink. Choose from a tour to a producer, distillery or brewery, a visit to a farmers market, a morning or afternoon of learning in one of the cookery schools or just enjoy a plateful of food.
