From burgers to lobster, there is intention for each ingredient that is plated. Chef Byron’s prior culinary experience in Guatemala has afforded him the ability to appreciate the abundance of fresh ingredients that literally grow out of his back yard, giving his palate an education unique in this part of the world.
Collaborating with local food suppliers & fishermen, the Bayview Restaurant is proud of its farm to plate sourcing. Locally harvested seaweed from Blath naMara is on the menu, along with Aran Island’s Goat Cheese, organic produce grown by The Aran Artisan and of course, fruits of the sea from Inis Mor’s local fishermen!
